
Lentils are a healthy base to salad. This salad can be eaten as a side dish or on his own.
If you use dry lentils, boil the lentils following pack instructions, drain and rinse well or use canned precooked lentils.
Blend lime juices, vinegar and a pinch of salt in a salad bowl, then toss in the onion rings. Whisk together the oil, cumin and garlic. Add into the onions with the cooled lentils, coriander, tomatoes, spinach and plenty of seasoning.
This salad just gets better overnight. Therefore, it’s perfect to prepare in the evening as a side dish for dinner and then take rest for lunch.
