
This soup is absolutely great for two reasons, for cleaning out your fridge and using leftovers and it’s also great for making a bigger portion for the freezer.
Nourishing, warm soup that is perfect for using up leftovers.
If you choose dried beans, soak them at least 12 hours before cooking.
Drain and rinse beans. Add tomatoes and corn (including the juice) to your pot.
If you want meat, add the meat now together with all the ingredients of your choice.
Cook on low for 6-8 hours or high for 60 minutes.
Add salt and pepper.
