Quinoa is one of the ingredients I like to cook in bigger portion and reuse for several different dishes within the next days.
Quinoa is a great food to eat regularly , rich in protein, fiber, iron and vitamin B12.
Place in saucepan and add the milk or water, 1-2 cinnamon sticks, and a pinch of salt. Bring to simmer, cover and reduce heat to a low simmer for 15 minutes.
Remove the pan from the heat and let the quinoa sit for 5 more minutes or until the milk is absorbed and the quinoa is cooked. Taste and add additional spices to your liking.
Put quinoa in bowls and add your toppings of choice like toasted almonds, toasted coconut, and fruit.
Serve with maple syrup if you like.
If you are in a rush in the morning, prepare the quinoa the night before. If you prepare a larger portion of quinoa just boil the quinoa in water and add some milk in the morning while warming up the dish.
