
I often prepare 2 servings of this oatmeal and reheat 1 serving the next morning or making oatmeal patties as snack (mix the leftover oatmeal with 1 or 2 eggs and fry in a pan like pancakes). Oatmeal patties is great “kvelds mat” and something my son loves eating.
Warm and nourishing breakfast.
Place oats, coconut milk, water and salt in a small saucepan and bring to a simmer. Stir until the water is just absorbed and the porridge has thickened, about 3-4 minutes.
For grain free options use buckwheat, millet or quinoa.
